Loaded Potato Chili Tacos

Perfectly seasoned and so flavorful, these Loaded Potato Chili Tacos by @MandaJessPanda will quickly become your favorite comfort food!

Ingredients

  • 1 1/2 Pounds Ground Beef

  • 1 Can (14 1/2 Ounces) Petite Diced Tomatoes

  • 1 Can (15 Ounces) Red Beans

  • 1 Box Tony’s Mild Chili Seasoning Mix (or Tony’s Original Chili Seasoning Mix)

  • 1 Cup Water

  • 6 Small Red Potatoes, Peeled and Diced

  • 1/2 Cup Heavy Cream

  • 1/2 Teaspoon Tony’s Original Creole Seasoning

  • 1 Teaspoon Garlic Powder

  • 1 Teaspoon Parsley Flakes

  • 1/4 Cup Pepper Jack Cheese

  • Flour Tortillas

  • Optional Toppings: Sautéed Onions & Peppers, Shredded Pepper Jack Cheese, Sour Cream

  • 1 Teaspoon Butter & Drizzle Olive Oil for Cooking

Directions

  1. In a large skillet, brown the ground beef. Cook until the beef is no longer pink. Once cooked through, drain the excess liquid.
  2. Stir in the diced tomatoes, beans, Tony’s Chili Seasoning Mix and water. Bring to a boil.
  3. Once boiling, lower the heat and simmer for about 15-20 minutes until thickened.
  4. If you find the sauce is too thin, raise the heat and boil to cook down some of the liquid. The thicker the chili, the firmer your tacos will be.
  5. While the chili is simmering, prepare your mashed potatoes. Add the diced potatoes to a large pot and cover with water. Bring to a boil. Cook until fork tender.
  6. Drain the potatoes then return them to the pot. Add in the heavy cream, pepper jack cheese, Tony’s seasoning, garlic powder and parsley flakes. Mash until creamy.
  7. Lay out a tortilla. Spread mashed potatoes on one half of the tortilla. Add chili on top (avoiding the ends to prevent overfilling), then add your favorite toppings and shredded cheese. Gently fold over to close. Repeat as with as many tortillas as you want.
  8. Heat 1 teaspoon of butter and a drizzle of olive oil in a large pan or skillet. Bring to medium heat. Add in two tacos. Cook for 3-4 minutes or until golden. Flip and cook for another 3-4 minutes. Serve warm and enjoy!
