Ingredients

  • 1/2 cup mayonnaise

  • 2 tsp. horseradish

  • 2 tsp. Creole mustard

  • 1/2 tsp. orange zest

  • 1/2 tsp. Tony Chachere’s Creole Seasoning

  • Pinch, Cayenne Pepper

  • 1/4 tsp. smoked paprika

  • 1/4 tsp. garlic powder

  • 1/4 tsp. hot sauce

  • lemon juice, small squeeze

  • 16oz. peeled cooked crawfish tails

  • 4 top-split hot dog buns

  • Butter

  • Gouda cheese

  • 2 bags boudreaux’s frozen cooked peeled & deveined, crawfish tail

  • Clear

Directions

  1. Crawfish Mix: Stir together mayonnaise, horseradish, mustard, orange zest and juice, Tony’s seasoning, garlic powder, cayenne pepper, smoked paprika and hot sauce in a medium bowl until smooth.
  2. Add crawfish.
  3. Toasted Brioche Rolls: Melt butter in a large skillet over medium. Add buns, and toast until golden on both sides, 1 to 2 minutes per side.
  4. Assemble: Add shredded Gouda Cheese, evenly fill toasted buns with crawfish mixture. Top evenly with fresh parsley.
