Ingredients

  • 2.25 lbs lean ground beef

  • 1 yellow onion diced

  • 3 green onion chopped

  • 1 1/2 tbs Tony Chachere’s original seasoning

  • 1 tbs chili powder

  • 1/2 tbs cumin

  • 6 oz tomato paste

  • 1 can rotel

  • 2 cans beef broth (10.5 oz cans)

  • 2 cups water

  • 1lb pasta of choice

  • 1 lb of cheddar cheese shredded

  • Clear

Directions

  1. Heat skillet to medium high heat. Add ground beef, diced onion, and white parts of the diced green onion. Season with Tony Chachere’s original seasoning, chili powder, and cumin. Stir to combine. Cook until meat is browned.
  2. Add in tomato paste and can of rotel. Stir to combine and cook for a few more minutes.
  3. Add in pasta, followed by beef broth and water. Reduce heat to medium- low. Simmer until pasta is done, stirring occasionally.
  4. Add about 1/2 of shredded cheese (Save the other half for garnishing at the end). Stir in cheese until melted.
  5. Garnish with additional cheese and green onion. Enjoy!
