Cheesy Chicken and Rice Casserole

This Cheesy Chicken and Sausage Casserole recipe by @firehousegrub is creamy, cajun and will satisfy your comfort food mood.

Ingredients

  • 2 Boxes of Tony Chachere’s Yellow Rice Dinner Mix

  • 1.5-2 lbs of cubed chicken breast

  • 12oz sliced smoked sausage

  • 1 onion diced

  • 1 bell pepper diced

  • 1 jalapeño diced

  • 1 tbs minced garlic

  • 4 cups heavy cream

  • 3-4 tbs flour

  • 2 cups cheddar cheese

  • 1/2 cup grated Parmesan cheese

  • Tony Chachere’s Original Seasoning

  • 1 tbs Italian seasoning

  • Clear

Directions

  1. Preheat oven to 350. Cook yellow rice according to instructions on box. Use 2 cups of chicken broth during this process instead of water. 
  2. Coat chicken in olive oil and liberally season with Tony’s and Italian seasoning. Cook in skillet over medium high heat until browned. Remove from skillet. 
  3. In same skillet, add sausage and cook until browned. Remove from skillet. 
  4. In same skillet, add onion, bell pepper, and jalapeño. Cook until soft and browned slightly. Add minced garlic and cook for another minute or until fragrant. 
  5. Add flour. Stir and cook until browned to make a roux. 
  6. Stir in chicken broth and heavy cream. Bring to a simmer and continue to stir for a couple minutes. Reduce heat to low. 
  7. Add in Parmesan cheese and 1 cup of cheddar cheese. Fold cheese into sauce until melted. 
  8. Add in chicken, sausage, and yellow rice. Stir to combine. 
  9. Top with more cheddar cheese and bake for 20 minutes or until cheese is melted on top.
