Cajun Pesto Salmon Sandwiches

These Cajun Pesto Salmon Sandwiches with a tomato and basil topping by @mandajesspanda are ready to stop you in your tracks with deliciously satisfying and refreshing flavor!

Ingredients

  • For the Salmon:

  • 1 lb 3oz salmon filet

  • 1 tablespoon Tony’s Seafood Marinade

  • 2 teaspoons Tony’s Bold Seasoning (or to taste)

  • 2 teaspoons garlic powder

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • For the Tomato Basil Topping:

  • 3 cups cherry tomatoes

  • 6 garlic cloves, minced

  • 2 tablespoons olive oil

  • 1/2 teaspoon red wine vinegar

  • 1/2 teaspoon Tony’s Original Seasoning (or to taste)

  • 1/3 cup basil, sliced

  • For the Cajun Pesto Sauce:

  • 2 teaspoons pesto

  • 2 tablespoons mayonnaise

  • 1 tablespoon Greek Yogurt

  • 1 teaspoon Tony’s Original Creole Seasoning (or to taste)

  • Mozzarella slices for serving

  • Ciabatta, toasted

  • Clear

Directions

  1. Evenly spread the cherry tomatoes in your air fryer basket and air fry at 390° for 12-15 minutes or until lightly charred.
  2. Let cool, then add to a large bowl. Add in the garlic, olive oil, red wine vinegar, Tony’s Original seasoning and basil. Mix well. Set aside or refrigerate until ready to serve.
  3. Season salmon with all dry seasonings listed under ‘for the salmon’ as well as the Tony’s seafood marinade. Allow to marinate for at least 30 minutes in the fridge.
  4. Air fry salmon at 360° for about 15-20 minutes or until the salmon is cooked through or to your desired doneness.
  5. In a small bowl, combine all ingredients listed under ‘for the Cajun Pesto Sauce. Mix well.
  6. To serve, toast your favorite bread (I use ciabatta). Add some mozzarella, pesto sauce, salmon, and tomato topping. Enjoy!
