Cajun Breakfast Pancake Tacos

Sweet and savory, these Cajun Breakfast Pancake Tacos by @MandaJessPanda are everything you could hope for, with Creole flavor infused throughout, you’ll keep coming back for more!

Ingredients

  • 9 Pancakes (Can be Store-bought or Homemade)

  • For the Cajun Breakfast Sauce:

  • 1/4 Cup Mayonnaise

  • 1/4 Cup Greek Yogurt

  • 1 Teaspoon Tomato Paste

  • 2 Teaspoons Water

  • 1 Teaspoon Apple Cider Vinegar

  • 1 Teaspoon Tony’s BOLD Creole Seasoning

  • 1/4 Teaspoon Smoked Paprika

  • 1/4 Teaspoon Sugar

  • For the Sausage and Veggie Mix:

  • Olive Oil

  • 1 Kielbasa Sausage Link (12 Ounces), Diced

  • 1/2 Small Yellow Onion, Finely Diced

  • 1/2 Small Red Pepper, Finely Diced

  • 1/2 Small Green Pepper, Finely Diced

  • 1/2 Teaspoon Tony’s No Salt Seasoning

  • Tony’s Original Creole Seasoning, to Taste

  • For the Eggs:

  • 6 Large Eggs

  • 1 Tablespoon Melted Butter

  • 3 Tablespoons Milk

  • Tony’s Original Creole Seasoning, to Taste

  • 2 Slices American Cheese

  • For Topping:

  • Sliced Green Onions & Syrup

  • Clear

Directions

For the Cajun Breakfast Sauce:

  1. Add all ingredients lusted for Cajun Breakfast Sauce to a small bowl.
  2. Mix well and set aside.

For the Sausage and Veggie Mix:

  1. Bring a drizzle of olive oil to medium-high heat in a large skillet.
  2. Add in the sausage and sauté for about 3-4 minutes or until browned.
  3. Add in the peppers and onions and season to taste with Tony’s No Salt and Original seasonings. Sauté for another 2-3 minutes, stirring occasionally until the veggies are browned and softened to your liking.

For the Eggs:

  1. In a large bowl, whisk together the eggs, milk, butter and Tony’s Original Creole Seasoning.
  2. Spray a large skillet with non-stick spray and bring to medium heat. Add in the egg mixture. Gently fold and flip for about 2-3 minutes or until the eggs are cooked through. Once cooked, fold in sliced cheese until melted.

Assembling the Tacos:

  1. To assemble the tacos, lay out the pancakes.
  2. Top pancakes with the eggs and the sausage and veggie mix.
  3. Next, drizzle with the Cajun Breakfast Sauce, green onion and syrup. Enjoy!
