Wild Ducks A La George

This is a great recipe for stuffed duck! These ducks are stuffed with delicious vegetables mixed and rubbed generously with Tony’s Original Creole Seasoning. They’re then cooked with red wine and chicken broth and topped with green onions, parsley and mushrooms.

  • 4 Whole Ducks, Dressed

  • 4 Tablespoons Tony’s Original Creole Seasoning

  • 4 Whole Onions, Chopped

  • 4 Whole Celery, Chopped

  • 1 Whole Bell Pepper, Chopped

  • 4 Tablespoons Oil

  • 1 Cup Burgundy Wine

  • 2 Cans Chicken Broth

  • 1/2 Cup Green Onion, Chopped

  • 1/2 Cup Parsley, Chopped

  • 1 Can Mushrooms

  • 1/2 Tablespoon All-Purpose Flour

  • Clear


  1. Season ducks inside and out, generously, with Tony’s Original Creole Seasoning.
  2. In a small bowl, mix the vegetables.
  3. Add equally to inside of each duck.
  4. Pour oil in a large black iron pot.
  5. Brown ducks.
  6. Add wine, chicken broth and enough water to cover ducks.
  7. Bring to a boil.
  8. Reduce heat; simmer until tender, about 3-4 hours.
  9. Remove ducks from pot.
  10. Add green onions, parsley, mushrooms juice, thickened with a little flour.
  11. Cook for 5 minutes.
  12. Add water if more gravy is needed.
