Quesadilla Burgers with Cajun Sauce

  • For the burger patties:

  • 1 lb 10oz ground beef (80% lean, 20% fat)

  • 1 egg, beaten

  • Tony’s Original Seasoning, to taste (I use about 3-4 teaspoons)

  • 2 teaspoons garlic paste

  • 2 teaspoons minced onion

  • 1 tablespoon garlic powder

  • 2 teaspoons cumin

  • 1 tablespoon cilantro, minced

  • For the Cajun Burger Sauce:

  • 1 tablespoon mayonnaise

  • 3 tablespoons sour cream

  • 1/3 cup tomato sauce

  • 1/2 teaspoon sugar

  • 1 teaspoon worchestire sauce

  • 1 teaspoon Tony’s Bold Seasoning

  • 1/2 teaspoon smoked paprika

  • Tomato and Cilantro Salad:

  • 2 large tomatoes, seeds removed and diced

  • 1 tablespoon cilantro, minced

  • 1 teaspoon white onion, finely chopped

  • 1/2 teaspoon lime juice

  • Tony’s Original seasoning, to taste

  • Clear


For the Cajun Burger Sauce:

  1. Combine all ingredients listed for the Cajun Burger Sauce. Set in the fridge until ready to serve.

For the Burger Patties:

  1. Gently mix together all ingredients listed for the burger patties.
  2. Form into generous, palm-sized balls.
  3. Drizzle a large pan or skillet with olive oil. Bring to medium heat.
  4. Once hot, add the burger meat. Using a bowl or spatula, flatten to desired thickness.
  5. Cook about 6 minutes on each side, then flip and cook another 4 minutes or so or until cooked through.
  6. Repeat with the rest of the meat then set aside. Cut burgers in half to add to tortillas.

To Assemble Burgers:

  1. Combine all items for tomato and cilantro salad in a medium bowl, set aside.
  2. Drizzle large pan or skillet with oil. Add a tortilla. Cook about 2 minutes or until golden brown.
  3. Flip, then add cheese, 2 burger halves, tomato and cilantro salad, Cajun Burger Sauce, and any other toppings of your choosing.
  4. Flip the tortilla closed allowing to cook just until the cheese melts. Remove from heat, cut in half and enjoy with your extra Burger Sauce on the side!
