Holiday Ham Loaf with Brown Tomato Gravy

Add some down-home holiday cheer to your menu with this Holiday Ham Loaf by @Chef Bradley Bayou. It is rich, festive, and full of classic Creole flavor that will have everyone asking for seconds.

Ingredients

  • For The Ham:

  • 1 pound ham of choice – extremely fine diced (or food processor chopped)

  • 1 lb ground lean pork

  • 20 sage leaves, finely chopped

  • 3 sprigs of rosemary leaves, finely chopped

  • 20 Saltine Crackers (crushed but not powdered)

  • 1 medium sweet onion

  • 2 eggs

  • ½ cup heavy cream

  • 1 Tbsp Tony’s Creole Style Butter Injectable Marinade

  • 1 Tbsp Tony’s 30-Minute Steakhouse Marinade

  • 2 tsp Tony’s Lite Creole Seasoning

  • 3 Tbsp stoneground mustard

  • 3 Tbsp brown sugar

  • For The Brown Tomato Gravy: 

  • 3 medium tomatoes, diced

  • 2 ½ Tbsp Tony’s Instant Brown Gravy Mix

  • 1 cup stock of choice (or water)

  • Clear

Directions

  1. Preheat oven to 400°F.
  2. Fold ham, pork, sage, rosemary, crackers, onion, egg, cream, Tony Chachere’s marinades, and Tony Chachere’s seasoning in a medium mixing bowl until well incorporated.
  3. Evenly form the mixture into an 8×8 Pyrex glass baking dish or loaf dish, and bake for 1 hour.
  4. Take the loaf out of the oven and brush with brown sugar and mustard mixed together. Then continue to bake for 30 additional minutes to form a “crust”.
  5. 10 minutes before the loaf is finished baking, simmer tomatoes, Tony’s Instant Brown Gravy Mix, and stock of choice for 2-4 minutes. Keep warm for serving. Top individual servings with gravy and enjoy!
