Corned Beef Dirty Rice

This Irish-inspired Corned Beef Dirty Rice by @MyDiaryOfUs is a lucky twist on a cajun classic—hearty, flavorful, and perfect for St. Paddy’s Day!

Ingredients

  • 1 Box Tony Chachere’s Creole Dirty Rice Dinner Mix

  • 1 Lb. Diced Corned Beef (I use deli corned beef cut thick, but you can also make homemade or use up any leftovers)

  • 2 Cups Finely Sliced Cabbage

  • 1/2 Cup Diced Onion

  • 2 1/4 Cups Beef Stock

  • 1/2 Tsp. Tony Chachere’s Creole Seasoning

  • 1 Tbsp. Oil (Avocado or Vegetable)

  • Green Onions for Topping

  • Clear

Directions

  1. Bring stock to a boil and add in the dirty rice package and cook for 25 minutes until done.
  2. Meanwhile add oil to a large cast iron skillet and add corned beef, cabbage, onion, and Tony Chachere’s Creole Seasoning and sauté for 5-10 minutes until veggies start to become tender and corned beef browns slightly.
  3. Add the cooked dirty rice to the skillet and mix together with the meat and vegetables and cook for another couple of minutes until flavors combine.
  4. Finish the dish off with sliced green onions and serve immediately.
