Chipotle Chili Mac

Ingredients

  • 1 Tablespoon Olive Oil

  • 1 Tablespoon Tony’s Original Creole Seasoning

  • 1/2 Tablespoon Tony’s No Salt Seasoning Blend

  • 1 Medium Yellow Onion, Diced

  • 1/2 Red Bell Pepper, Diced

  • 6 Cloves Fresh Garlic (or to Taste), Minced

  • 1-2 Chipotle Peppers in Adobo (Depending on Your Spice Level)

  • 1 Tablespoon Tomato Paste

  • 1 Pound Ground Beef

  • 2 Tablespoons Chili Powder

  • 1 Tablespoon Cumin

  • 1 Teaspoon Oregano

  • 1 Teaspoon Cayenne (or to Taste)

  • 28 Ounces Crushed Tomatoes

  • 3/4 Cup Beef Broth

  • 1/4 Cup Whole Milk

  • 2 Cups Cheddar Cheese, Freshly Shredded

  • 15 Ounces Black Beans, Rinsed and Drained (Optional)

  • 1 Pound Cooked Elbow Noodles (or Shells if Preferred)

  • Sour Cream (or Greek Yogurt) and Chopped Green Onions to Garnish

  • Clear

Directions

  1. In a large saucepan or Dutch oven, heat olive oil over medium heat. Add in your diced onion and bell pepper, cook for 3-5 minutes, or until they begin to soften. Add in your minced garlic and cook until fragrant.
  2. Add your chipotle peppers and tomato paste. Stir well and cook for about 1-2 minutes. Add in your ground beef along with all your seasonings and cook until no longer pink.
  3. Add in your crushed tomatoes and beef broth. Stir and let simmer for about 10 minutes.
  4. Add in your beans, cooked pasta, milk and cheese. Stir until the cheese is fully melted.
  5. Top with sour cream and green onions. Enjoy!
