Ingredients

2 Boxes of Tony Chachere’s Yellow Rice Dinner Mix
-
1.5-2 lbs of cubed chicken breast
-
12oz sliced smoked sausage
-
1 onion diced
-
1 bell pepper diced
-
1 jalapeño diced
-
1 tbs minced garlic
-
4 cups heavy cream
-
3-4 tbs flour
-
2 cups cheddar cheese
-
1/2 cup grated Parmesan cheese
-
Tony Chachere’s Original Seasoning
-
1 tbs Italian seasoning

Directions
- Preheat oven to 350. Cook yellow rice according to instructions on box. Use 2 cups of chicken broth during this process instead of water.
- Coat chicken in olive oil and liberally season with Tony’s and Italian seasoning. Cook in skillet over medium high heat until browned. Remove from skillet.
- In same skillet, add sausage and cook until browned. Remove from skillet.
- In same skillet, add onion, bell pepper, and jalapeño. Cook until soft and browned slightly. Add minced garlic and cook for another minute or until fragrant.
- Add flour. Stir and cook until browned to make a roux.
- Stir in chicken broth and heavy cream. Bring to a simmer and continue to stir for a couple minutes. Reduce heat to low.
- Add in Parmesan cheese and 1 cup of cheddar cheese. Fold cheese into sauce until melted.
- Add in chicken, sausage, and yellow rice. Stir to combine.
- Top with more cheddar cheese and bake for 20 minutes or until cheese is melted on top.
