Cheesy Boudin Tacos

@capt.cooking puts a Cajun twist on traditional street tacos in honor of Mardi Gras. These Cajun-inspired Cheesy Boudin Tacos are packed with plenty of Creole flavor thanks to Tony Chachere’s BOLD Creole Seasoning.

 

 

Cheesy Boudin Tacos

Kitchen Tip : Cheesy Boudin Tacos

Ingredients

  • 2 Boudin Links

  • 2 Cups Mozzarella Cheese

  • Corn Tortillas

  • 3 Tomatoes, Whole

  • 1 Red Bell Pepper, Halved

  • 1 Onion, Halved

  • 14 Ounces Chicken Broth

  • Cooking Oil

  • Cilantro, Chopped for Garnish

  • Tony’s Original Creole Seasoning, to Taste

  • Tony’s BOLD Creole Seasoning, to Taste

  • 1 Cup Tony’s Bloody Mary Mix

  • Clear

Directions

Cooking the Boudin:

  1. Bake the boudin at 350°F for 10-15 minutes.
  2. Empty out the casing and add the filling into a bowl.
  3. Season to taste with Tony’s Original Creole Seasoning, then set the boudin aside.
  4. If you can’t find boudin in the stores near you, you can make your own.

Making the Sauce:

  1. Boil the tomatoes & bell pepper until soft, about 3 minutes. Then remove the skin from the tomatoes.
  2. Blend together the tomatoes, bell pepper, onion, chicken broth and Tony’s Bloody Mary Mix.
  3. Add cooking oil to a pan on high heat, then add in the sauce. Cook it down for 10-15 minutes, seasoning to taste with Tony’s BOLD Creole Seasoning.
  4. Once done, set aside.

Making the Tacos:

  1. Dip a corn tortilla into the sauce covering both sides, then set it in a pan on medium heat.
  2. Fry the first side of the tortilla for 30 seconds up to 1 minute, then flip it.
  3. Add the boudin and cheese onto the tortilla and then fold it in half. Fry the taco on both sides until crisp. Repeat with remaining tortillas and ingredients.
  4. Plate the tacos, garnish with cilantro and enjoy!
