Take Taco Tuesday to the next level with the flavors of Brussels sprouts, sweet corn and Creole seasoning. These Cajun Shrimp Tacos by Creole For The Soul are super easy to make and so dang good!

Cajun Shrimp Tacos

Ingredients

  • 1 Pound Medium Shrimp, Peeled and Deveined

  • 10 Ounces Brussels Sprouts, Shaved

  • 10 Ounces Frozen Corn Kernels

  • 1/4 Cup Mayonnaise

  • Tony’s Original Creole Seasoning or Tony’s BOLD Seasoning, to Taste

  • Ground Cumin, to Taste

  • 3 Tablespoons Olive Oil

  • 4 Corn Tortillas

  • Clear

Directions

  1. In a medium bowl, add shrimp and coat with Tony’s Original Creole Seasoning or with Tony’s BOLD Seasoning for extra flavor, and cumin.
  2. Add oil to a skillet and set to medium-high heat.
  3. Add in shrimp and let cook for 2 minutes on each side or until shrimp turn pink and are cooked through.
  4. Remove shrimp from skillet and set aside. Set heat to low.
  5. Add in Brussels sprouts and corn, and toss in remaining oil in skillet.
  6. Let cook for 3 minutes or until corn is soft.
  7. Transfer mix to a bowl and add in mayonnaise. Stir to coat vegetables.
  8. Set skillet to medium and heat tortillas one-by-one for a few minutes until warmed.
  9. Place tortillas on a plat and add in the slaw to each and then top with shrimp. Enjoy!
