Tony's Pinto Bean and Smoked Ham Hocks

This dish is great served over a bed of rice or in a bowl with some corn bread off to the side.
Prep time: 5 minutes   Cooking time: 60 minutes   Serves: 20  


2 pound Pinto Beans
4 pound Smoked Ham Hocks
2 cup Chopped Onions
1 cup Bell Pepper
6 teaspoon Garlic
1 3/4 tablespoon Tony Chacheres Original Creole Seasoning
1 tablespoon Worcestershire Sauce


1: In a medium pot, soak beans overnight in enough water to cover. Drain and rinse.
2: Drain and rinse.
3: Using a 5 quart pot, add all ingredients with sufficient water to cover bring to a boil.
4: Reduce heat and simmer slowly until meat falls from the bones and beans are tender (about 1 hour).
5: Remove bones and fat.
6: Adjust seasoning continue to simmer until sauce is thick.
