Ingredients

  • 5 large catfish fillets

  • 4 cups day-old cooked rice

  • 2 red bell peppers, diced

  • 1 large yellow onion, diced

  • 3 celery stalks, diced

  • Tony Chachere’s Seasoned Fish Fry Mix

  • 2 tablespoons dijon or brown mustard

  • 1 tablespoon soy sauce

  • 1 tablespoon fish sauce

  • 1/2 tablespoon sesame oil

  • green onions for garnish

  • Tony Chachere’s Original Creole Seasoning, to taste

  • garlic powder, to taste

  • onion powder, to taste

  • Italian seasoning, to taste

  • cayenne pepper, to tase

  • 1 tablespoon olive oil

  • canola oil, for frying

  • Clear

Directions

  1. Pat catfish fillets dry.
  2. Coat with Tony Chachere’s Creole seasoning, followed by the remaining seasonings (garlic powder, onion powder, Italian seasoning, and cayenne pepper).
  3. Add Tony Chachere’s Fish Fry Mix to a plate or shallow bowl. Sprinkle in all seasonings, except Tony Chachere’s Creole Seasoning.
  4. Add enough canola oil to a large Dutch oven or fryer, and heat to 350ºF.
  5. Once oil is heated, work in batches to thoroughly coat each fillet in the breading and carefully drop into the oil. Cook fillets for 6-8 minutes, or until they float to the top and are golden brown. Remove from the oil and set aside on a wire rack or over paper towels.
  6. Once the fish is fried, add olive oil to a skillet over medium-high heat. Once heated, add in the vegetables and sauté for 10 minutes or until they’re tender.
  7. Reduce heat to low and add in the cooked rice. Break apart and stir into the vegetables for 2-3 minutes.
  8. Add a fillet to the skillet and rough chop into the rice mixture.
  9. Stir in the soy sauce, fish sauce, and sesame oil.
  10. Add a serving of rice to a plate. Top with another fillet and garnish with green onions.
