Tony’s Winter Citrus Salad

Ingredients

  • For The Salad:

  • 1 Blood Orange, Peeled and Cut into Circles

  • 1 Grapefruit, Peeled and Cut into Circles

  • 1 Navel Orange, Peeled and Cut into Circles

  • 1 Watermelon Radish, Thinly Sliced

  • 2 Tablespoons Red Onion, Thinly Sliced

  • 1 Cup Shredded Leftover Turkey

  • 2 Ounces Goat Cheese

  • Pistachios, Salted and Roasted, to Taste

  • Tony’s Original Creole Seasoning, to Taste

  • Citrus-honey Vinaigrette, or Your Favorite Store-bought Vinaigrette

  • For the Citrus Honey Vinaigrette:

  • 1 Clove Garlic, Grated

  • 1/4 Cup Fresh Orange Juice

  • 2 Tablespoons Lime Juice

  • 2 Tablespoons Lemon Juice

  • 3 Tablespoons Honey

  • 1/2 Cup Olive Oil

  • Clear

Directions

For the Salad:

  1. On large platter, assemble citrus circles.
  2. Add remaining ingredients in layers for serving.
  3. Before serving, dress with Citrus Honey Vinaigrette or salad dressing of choice.
For the Citrus Honey Vinaigrette:
  1. In a mason jar, combine all ingredients and shake well.
