Tony’s Creole Mash Up

@capt.cooking puts a Tony’s twist on the signature Famous Bowl. With creamy mashed potatoes, fresh sweet corn, crispy chicken and Tony’s Brown Gravy Mix, this bowl will easily be a family favorite.

Ingredients

  • 4-5 red potatoes, quartered

  • 1-2 ears of corn, frozen or fresh

  • 3-4 chicken thighs, boneless & skinless

  • 3/4 cup milk

  • 1/2 cup cheddar cheese, shredded

  • green onions, chopped

  • 1/2 tbsp cooking oil

  • 1 cup water (for gravy mix)

  • Tony Chachere’s Original Creole Seasoning

  • 1/2 cup Tony Chachere’s Injectable Creole Style Butter

  • Tony Chachere’s Creole Brown Gravy Mix

  • Clear

Directions

For The Mashed Potatoes and Corn: 

  1. In a pot, add potatoes into a pot of water (fully submerged).
  2. Boil potatoes on high heat until they are soft enough to mash up with a fork (about 10 minutes).
  3. Once soft, transfer potatoes from the water into a mixing bowel, add your milk,  and 1/4 cup of Tony Chachere’s Injectable Creole Style Butter.
  4. Mash mixture until smooth, season to taste with Tony Chachere’s Original Creole Seasoning, then set aside.
  5. In another pot, add corn into a pot of water (fully submerged).
  6. Boil ear of corn on high heat until kernels are tender (about 10 minutes).
  7. Remove ear of corn from the boiling water and using a knife, carefully cut kernels off ear of corn vertically.
  8. Place the cooked corn into a boil, season with 1/4 cup Tony Chachere’s Injectable Creole Style Butter, then set aside.

For The Chicken and Gravy: 

  1. Cut chicken thighs Ito bite-sized pieces and set aside.
  2. Add the cooking oil into a pan on medium-high heat.
  3. Add chicken into pan. Season the chicken with paprika and Tony Chachere’s Original Creole Seasoning to taste.
  4. Cook the chicken for 10-15 minutes, then set aside.
  5. In a saucepan, add water and 2 tbsp of Tony Chachere’s Creole Brown Gravy Mix. Follow directions on gravy can, then set aside.

For The Bowl: 

  1. In a bowl, add a generous scoop of the mashed potatoes as the base of bowl.
  2. Next add a scoop of gravy, topped with a scoop of corn and chicken.
  3. Lastly, garnish the dish with shredded cheddar cheese and chopped green onions.
