It doesn’t get more Cajun than with Tony’s Chicken and Sausage Jambalaya! A Southern favorite, this dish mixes an array of delicious flavors. There is chicken, rice, smoked sausage, garlic, bell pepper and onions. This dish is best served with a side of toasted French Bread.

Ingredients

  • 3-Pound Fryer Chicken, Cut Up

  • 4 Tablespoons Tony’s Original Creole Seasoning

  • 4 Tablespoons Margarine

  • 4 Whole Garlic Cloves, Minced

  • 2 Whole Celery, Chopped

  • 1 Whole Bell Pepper, Chopped

  • 1/2-Pound Smoke Sausage

  • 4 Whole Onions, Chopped

  • 3 Cups Rice

  • 6 Cups Water

  • Clear

Directions

  1. Season chicken generously with Tony’s Original Creole Seasoning.
  2. Add margarine to a 5-quart Dutch oven and fry chicken until brown.
  3. Remove chicken from pot and add all vegetables.
  4. Sauté for 10 minutes.
  5. Add sausage and rice and cook for 10 minutes, mixing thoroughly.
  6. Return chicken to pot; add water and stir.
  7. Cover and simmer for about 30 minutes or until rice is fully cooked.
