Sweet & Spicy Corn Fritters

Ingredients

  • 1 can whole kernel corn drained

  • 3/4 cup milk

  • 2 eggs

  • 1 1/4 cup flour

  • 1 tbs sugar

  • 2/3 cup cheddar cheese

  • 1 jalapeño deseeded and diced

  • 4-6 strips of bacon diced and browned

  • Tony Chachere’s Original Creole Seasoning to taste

  • Clear

Directions

  1. In a skillet, cook diced bacon until browned. Remove from skillet and save grease.
  2. Add corn, milk, flour, sugar, jalapeño, and Tony’s in a mixing bowl. Stir to combine. Add cheese and bacon and fold into the mixture.
  3. Add a little bacon grease back to the skillet and heat to medium heat. Add a dollop of the corn fritter mixture to the skillet. Cook for 3 minutes per side or until browned to liking.
  4. Remove from the skillet and drizzle with honey! Enjoy!
