Ingredients

  • 6 Jalapeños cut in halves and remove seeds

  • 1 block of cream cheese

  • Shredded Colby jack cheese

  • 1/2 lb Salmon

  • Tony Chachere’s Bold Creole Seasoning

  • Clear

Directions

  1. Cross hatch some cuts into your cream cheese for more smoke penetration then season cream cheese and salmon with Cajun seasoning.
  2. Place in a preheated smoker set at 225F for about 30-40min
  3. When done remove then let cool for 10min.
  4. Bump smoker temperature to 300F
  5. Add cream cheese into a large mixing bowl, add in shredded cheese, and mix well.
  6. Add mixture into each half of a jalapeño then lightly season with more Cajun seasoning.
  7. Place into the smoker for 15-20min
  8. Remove then let cool for 5min before serving.
