Red Beans and Rice is a southern comfort-food dish prepared with Tony’s Creole seasoning, smoked sausage, and tender red beans served over rice.

Ingredients

  • 3 Cups Dried Red Beans

  • 1 Tablespoon Oil

  • 1 Tablespoon Flour

  • 2 Cups Onions, Chopped

  • 1 Pound Smoked Sausage

  • 2 Tablespoons Tony’s Original Creole Seasoning

  • 4 Cups Green Onions, Chopped
  • Clear

Directions

  1. In a medium pot, soak beans overnight in enough water to cover.
  2. Drain and rinse.
  3. Heat oil in deep pot over low heat.
  4. Add flour, onions and garlic.
  5. Stir frequently and cook until light brown.
  6. Add smoked sausage and beans.
  7. Add enough water to cover the beans.
  8. Season with Tony’s Original Creole Seasoning.
  9. Cook slowly until beans are tender (about an hour) stirring often.
  10. Serve over steamed rice and garnish with green onions.
