Pimento Cheese Cajun Chicken Sandwich

  • 2 chicken breasts

  • 2 cups buttermilk

  • 1/2 cup pickle juice

  • 2 tbs Tony’s Original Creole Seasoning

  • 1 cup flour

  • 2 tbs powdered sugar

  • hot honey

  • Pimento cheese

  • Pickled jalapeños

  • Brioche buns

  • oil for frying

  • Clear


  1. Combine buttermilk with pickle juice and 1 tbs of Tony’s
  2. Cut chicken breast in half and beat it flat with a tenderizer. Place chicken in buttermilk mixture. Let the chicken marinate for at least a couple hours.
  3. Combine flour, powdered sugar, and 1 tbs of Tony’s in a bowl. Coat chicken in mixture.
  4. Fry over medium to medium-high heat until golden brown and chicken reaches an internal temperature of 165°F.
  5. Toast brioche buns in pan. Place a few pickled jalapeños on bottom bun, followed by chicken. Then, drizzle with hot honey and spread some pimento cheese on top. Enjoy!
