One-Pan Creamy Cajun Pasta

Ingredients

  • 2-3 tsp Tony Chachere’s Original Creole Seasoning (to taste)

  • Olive oil

  • 1/2 tbsp Butter

  • 1/2 lb chicken (seasoned with Tony’s Original Creole Seasoning, garlic powder, onion powder, paprika)

  • 4 oz andouille sausage

  • 1/2 yellow onion, diced

  • 1/2 red bell pepper, diced

  • 6 cloves garlic, to taste

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp chicken bouillon seasoning

  • 1/2 tsp oregano

  • 1/2 tsp smoked paprika (or regular)

  • Pinch of cayenne, optional

  • 2-3 tbsp tomato paste

  • 3 cups chicken broth (start with 2.5 and add the rest if needed)

  • 1/2 lb pasta of choice, I used farfalle

  • 1/2 cup heavy cream or half & half

  • 1 cup parmesan cheese, plus more for topping

  • Fresh parsley and a squeeze of lemon to garnish, optional

Directions

  1. In a large pan, heat about a tbsp or so of olive oil over medium heat. Cook your sausage until browned on both sides. Remove from the pan and set aside.
  2. In the same pan, add in your chicken plus extra olive oil if needed. Cook until no longer pink. Remove and set aside.
  3. In the same pan, add a touch of butter followed by your onion, bell pepper, 1 tsp Tony’s, and the rest of your seasonings. Cook for about 3-4 minutes, or until the onion and bell pepper are tender. Throw in your garlic and cook for another 30 seconds.
  4. Add in your tomato paste, stir, and cook for another couple minutes. Pour in your chicken broth (start with 2.5 cups and add the extra 1/2 cup at the end if needed), scraping up any brown bits on the bottom of your pan, followed by your pasta. Season with another tsp or so of Tony’s, stir, and bring to a simmer.
  5. Cover and simmer for about 15 minutes, stirring occasionally. Once your pasta is tender, add in your cream, parmesan, cooked chicken and sausage. Stir and adjust seasonings if needed.
  6. Serve with more parmesan, fresh parsley, and a squeeze of lemon. Enjoy!
