George Motz, a well-known burger expert, calls the Double Cheeseburger at the Judice Inn in Lafayette, LA a classic, no frills burger, but it’s the Creole spice that makes it stand out. George’s take on this juicy, flavorful burger is sure to be a hit with your friends and family at the next BBQ!

Kitchen Tip : Judice Inn-Like Double Cheeseburger

Ingredients

  • 1 Pound High-Quality Ground Chuck

  • 1 Large Sweet Onion, Thinly Sliced

  • 3 Classic, Seeded Burger Buns

  • Butter

  • 6 Slices American Cheese

  • Mayonnaise

  • Yellow Mustard

  • Secret Red Sauce

  • Iceberg Lettuce, Shredded

  • Tony’s Original Creole Seasoning

  • 1/2 Cup Ketchup

  • 2 Tablespoons Tomato Paste

  • 2 Tablespoons Sweet Onions, Diced

  • 1/4 Cup Dill Pickles, Diced

  • 1/2 Teaspoon Garlic Powder

  • 1/2 Teaspoon White Vinegar

  • Tony’s Pepper Sauce, to Taste

  • Tony’s Original Creole Seasoning, to Taste

  • Clear

Directions

  1. Divide meat into 6 equal portions and roll into loosely formed balls.
  2. Cook the sliced onion in a pan with some butter and olive oil over low heat until caramelized, about 20 minutes.
  3. In a bowl, make the Secret Red Sauce by combining ketchup, tomato paste, sweet onion, dill pickles, garlic powder, vinegar, Tony’s Pepper Sauce and Tony’s Original Creole Seasoning. Whisk together and set aside. Butter the buns and set them aside.
  4. Hand smash the balls of beef using 2 squares of parchment paper. Place them on a flattop or in a cast iron skillet at 400°F and sprinkle with Tony’s Original Creole Seasoning.
  5. Place buns, butter side down, on flattop near burgers, or if using a cast iron pan, toast the buns first and set aside.
  6. Cook the burgers until liquid forms on top of patties, could be as fast as 2 minutes. Flip them and place a slice of cheese on each patty.
  7. On the bottom half of the toasted bun, spread on mayo and mustard. Add a cooked patty, then spoon some of the caramelized onion on top, then the second patty. Add a handful of shredded iceberg lettuce, a big dollop of the Secret Red Sauce and then the top half of the toasted bun.
  8. To make this a truly authentic Judice Inn-Like Double Cheeseburger, George says to wrap it up in waxed paper, grab a bag of Zapp’s chips and a cold beer!
