Jalapeño Corn Fritters

As Kait’s Kitchen says, “These Jalapeño Corn Fritters are simple enough to have as a weeknight dinner side dish and impressive enough to serve to friends as an appetizer.” With Tony’s More Spice Seasoning, you get the kick of Creole flavor with less of the salt!


  • 2 Cups Frozen Corn

  • 1 Jalapeño, Diced Small

  • 1 Egg

  • 1/2 Cup Flour

  • 1/4 Cup Corn Meal

  • 1 Teaspoon Baking Powder

  • 1/4 Cup Cheddar Cheese

  • 1/4 Cup Monterey Jack Cheese

  • 1/4 Cup Milk

  • 3/4 Teaspoons Tony’s More Spice Seasoning

  • 2 Tablespoons Olive Oil

  • Tony’s Creole-Style Ranch Salad Dressing

  • Clear


  1. Combine flour, corn meal, baking powder and Tony’s More Spice Seasoning in a large mixing bowl.
  2. Add flour mixture and the rest of the ingredients to a standing mixer (or use a hand mixer) and mix on low for 2-3 minutes.
  3. Form mixture into 12 fritters.
  4. Heat olive oil in a cast iron skillet on medium heat and fry them for 3-4 minutes on each side.
  5. Let cool for 5 minutes and then serve with Tony’s Creole-Style Ranch Salad Dressing.
