Jalapeño Corn Fritters

Ingredients

  • 2 Cups Frozen Corn

  • 1 Jalapeño, Diced Small

  • 1 Egg

  • 1/2 Cup Flour

  • 1/4 Cup Corn Meal

  • 1 Teaspoon Baking Powder

  • 1/4 Cup Cheddar Cheese

  • 1/4 Cup Monterey Jack Cheese

  • 1/4 Cup Milk

  • 3/4 Teaspoons Tony’s More Spice Seasoning

  • 2 Tablespoons Olive Oil

  • Tony’s Creole-Style Ranch Salad Dressing

  • Clear

Directions

  1. Combine flour, corn meal, baking powder and Tony’s More Spice Seasoning in a large mixing bowl.
  2. Add flour mixture and the rest of the ingredients to a standing mixer (or use a hand mixer) and mix on low for 2-3 minutes.
  3. Form mixture into 12 fritters.
  4. Heat olive oil in a cast iron skillet on medium heat and fry them for 3-4 minutes on each side.
  5. Let cool for 5 minutes and then serve with Tony’s Creole-Style Ranch Salad Dressing.
