Ingredients

1/4 cup sour cream

3/4 cup mayonnaise

3 mini corn on the cobs

1/2 box of 16oz rotini pasta

1/2 lb bacon diced
-
1/2 purple onion diced
-
1 tsp Tony’s bold seasoning
-
2 tbs freshly chopped cilantro
-
Juice from one lime
-
1/4 cup cotija cheese
- Clear
Directions
- Boil pasta until done to your liking. Brown diced bacon.
- While pasta and bacon cook, place corn on the cob on the grill. Grill over high heat until charred.
- In a mixing bowl, combine all ingredients listed above. Slice corn off of the cob into a bowl. Stir to combine and let sit in the fridge for at least 30 minutes. Enjoy!
