Ingredients

13-Ounce Package Smoked Sausage

2 Tablespoons Butter

1/2 Red Onion, Diced

1 Green Bell Pepper, Diced

10 Eggs

1 1/2 Teaspoons Tony’s Original Creole Seasoning
-
1/2 Cup Cottage Cheese
-
1 Cup White Cheddar Cheese, Shredded

Directions
- Slice the sausage.
- In a large cast iron skillet, brown both sides of the sausage and then remove it from the pan and set aside.
- Add your butter to the skillet and cook the onions and peppers until they’re translucent. Sprinkle on Tony’s Original Creole Seasoning to taste.
- In a large bowl, whisk your eggs. Add in Tony’s Original Creole Seasoning, cottage cheese and white cheddar cheese, and then stir in the sausage, then onions and peppers.
- Add the whole mixture back into the skillet and then put the skillet in the oven at 350°F for 20-25 minutes, the eggs will be firm and set and completely puffed up when it’s ready.
