Ingredients

  • 13-Ounce Package Smoked Sausage

  • 2 Tablespoons Butter

  • 1/2 Red Onion, Diced

  • 1 Green Bell Pepper, Diced

  • 10 Eggs

  • 1 1/2 Teaspoons Tony’s Original Creole Seasoning

  • 1/2 Cup Cottage Cheese

  • 1 Cup White Cheddar Cheese, Shredded

  • Clear

Directions

  1. Slice the sausage.
  2. In a large cast iron skillet, brown both sides of the sausage and then remove it from the pan and set aside.
  3. Add your butter to the skillet and cook the onions and peppers until they’re translucent. Sprinkle on Tony’s Original Creole Seasoning to taste.
  4. In a large bowl, whisk your eggs. Add in Tony’s Original Creole Seasoning, cottage cheese and white cheddar cheese, and then stir in the sausage, then onions and peppers.
  5. Add the whole mixture back into the skillet and then put the skillet in the oven at 350°F for 20-25 minutes, the eggs will be firm and set and completely puffed up when it’s ready.
