1 lb crawfish tails
1 lb pasta of choice (rotini is what’s traditionally used, but use whatever you like)
Reserved pasta water
6 tbsp butter
1-2 tbsp olive oil
1 bunch green onions, whites removed and diced
1 shallot, minced
8 cloves garlic, minced, to taste
¼ tsp cayenne, to taste
½ cup dry white wine (like a sauvignon blanc)
2 cups heavy cream (use half & half if you’re not using the wine)
1-2 tbsp lemon juice, to taste
¼ cup – ½ cup chopped fresh parsley, to taste
1 cup freshly shredded parmesan cheese
