Cilantro Lime Chicken with Chicken Rice

The freshness of cilantro, the zest of lime and Cajun seasonings blend together for a chicken rice dinner full of flavor. Creole For The Soul says this will be your go-to weeknight dinner, easy to make and with incredible taste in every bite.

Ingredients

  • 1 Pound Boneless Skinless Chicken Breast

  • 3 Tablespoons Olive Oil

  • Zest and Juice of 1 Lime

  • 2 Cloves Garlic, Minced

  • 1/2 Cup Cilantro, Chopped + More for Garnish

  • 1/4 Teaspoon Cumin

  • 1/4 Teaspoon Chili Powder

  • Tony’s More Spice Seasoning, to Taste

  • 1 Box Tony’s Creole Roasted Chicken Rice Dinner Mix

  • Clear

Directions

  1. Cook Tony’s Creole Roasted Chicken Rice Dinner Mix according to package instructions and set aside.
  2. Place chicken on a cutting board and lay a sheet of plastic wrap over them. Use a meat mallet to pound the chicken breasts to about 1-inch thickness.
  3. Transfer chicken to a large bowl and add olive oil, lime zest, lime juice, garlic, cilantro, cumin, chili powder and Tony’s More Spice Seasoning. Toss around until chicken is well coated in the mixture.
  4. Let marinate in the fridge for 30 minutes.
  5. Heat a large cast iron skillet to medium-high heat. Add chicken breasts and let them cook for about 4-5 minutes per side, or until a dark golden-brown crust forms on the outside.
  6. Check chicken to ensure its cooked through. Continue to cook until the chicken is completely done and reads 165°F in its thickest part.
  7. Garnish with chopped cilantro and a squeeze of lime.
  8. Pair with chicken rice and enjoy.
