1 Pound Boneless Skinless Chicken Breast

3 Tablespoons Olive Oil

Zest and Juice of 1 Lime

2 Cloves Garlic, Minced

1/2 Cup Cilantro, Chopped + More for Garnish

1/4 Teaspoon Cumin
-
1/4 Teaspoon Chili Powder
-
Tony’s More Spice Seasoning, to Taste

1 Box Tony’s Creole Roasted Chicken Rice Dinner Mix

Directions
- Cook Tony’s Creole Roasted Chicken Rice Dinner Mix according to package instructions and set aside.
- Place chicken on a cutting board and lay a sheet of plastic wrap over them. Use a meat mallet to pound the chicken breasts to about 1-inch thickness.
- Transfer chicken to a large bowl and add olive oil, lime zest, lime juice, garlic, cilantro, cumin, chili powder and Tony’s More Spice Seasoning. Toss around until chicken is well coated in the mixture.
- Let marinate in the fridge for 30 minutes.
- Heat a large cast iron skillet to medium-high heat. Add chicken breasts and let them cook for about 4-5 minutes per side, or until a dark golden-brown crust forms on the outside.
- Check chicken to ensure its cooked through. Continue to cook until the chicken is completely done and reads 165°F in its thickest part.
- Garnish with chopped cilantro and a squeeze of lime.
- Pair with chicken rice and enjoy.
