Cilantro-Lime Cajun Roasted Wings

Ingredients

  • 3 Pounds Chicken Wings or Drummettes

  • 1/2 Cup Fresh Cilantro Leaves, Chopped and Divided

  • 1/4 Cup Freshly Squeezed Lime Juice, Divided

  • 2 Tablespoons Avocado Oil, Divided

  • 1 Tablespoon Lime Zest

  • 2 Teaspoons Chili Powder

  • Tony’s Original Creole Seasoning, to Taste

  • Clear

Directions

  1. In a bowl, combine 1/4 cup cilantro, 2 tablespoons lime juice, avocado oil, lime zest and chili powder, then set aside.
  2. In a large bowl, add chicken wings and pour on the cilantro marinade. Toss chicken until covered completely in the marinade. Season chicken with 2 teaspoons or more of Tony’s Original Creole Seasoning. Set bowl in fridge and let marinate for two hours or overnight.
  3. Preheat oven to 425°F. Take wings out of fridge. Coat a cast iron skillet with avocado oil and set burner to medium-high heat.
  4. Once heated, add wings to skillet and sear for 5-8 minutes on both sides. You’re not trying to cook them through at this point, but just getting a nice color/char all over the wings.
  5. Place wings on a baking sheet with wire rack and place in the oven. Let them cook for 15 minutes, then flip and cook for another 15 minutes.
  6. Remove wings from oven, squeeze on some more lime juice and garnish with fresh cilantro. Enjoy!
