Kitchen Tip : Cheesy Cajun Corn & Green Chile Casserole

Ingredients

  • 12 Ounces Cream Cheese

  • 2 Eggs, Beaten

  • 1 Cup Heavy Cream

  • 1 Can (4 Ounces) Green Chiles, Diced

  • 1 Tablespoon Tony’s Original Creole Seasoning (More to Taste)

  • 2 Cups Colby Jack or Cheddar Cheese, Shredded & Divided

  • 1 Bag (12-14 Ounces) Frozen Corn, Partially Thawed

  • Chopped Tomato

  • Red Pepper

  • Jalapeño Pepper

  • Green Onions

  • Bacon

  • Clear

Directions

  1. Preheat oven to 325°F.
  2. Unwrap cream cheese and place on a plate. Heat in the microwave for about 30-45 seconds to soften.
  3. In a large bowl, mix together all remaining ingredients except for 1 cup of cheese.
  4. Spoon mixture into a 9×9-inch or small to medium casserole dish that has been buttered or sprayed with cooking spray.
  5. Sprinkle remaining cheese on top.
  6. Bake 35-40 minutes or until golden on top.
  7. Top with optional garnishes to decorate the top (chopped tomato, red pepper, jalapeño, green onions, bacon).

NOTE:

You can double the recipe and bake in a 9×13 or larger casserole dish.
