Caramelized Onion Pasta

This caramelized onion pasta by @mandajesspanda is the definition of FLAVORFUL with hints of sweet, spice, and savory, all at once!

Ingredients

  • For the Caramelized Onions: 

  • 1/2 stick salted butter

  • 2 1/2 medium yellow onions, sliced

  • 1 teaspoon reduced balsamic reduction (glaze)

  • For the Chicken: 

  • 2 chicken breasts, cut into medium cubes (2lbs)

  • 1 tablespoon olive oil

  • 1 1/2 teaspoons Tony’s Original Seasoning

  • 1 tablespoon garlic powder

  • 1 tablespoon parsley flakes

  • 1/2 teaspoon smoked paprika

  • For the Pasta: 

  • 1 red pepper, cut into medium-sized cubes

  • 1 cup cherry tomatoes, halved

  • 1 teaspoon roasted garlic

  • Tony’s Spice N’Herbs Seasoning, to taste

  • 8oz Farfalle pasta (about 3 1/2 cups)

  • 3 cups reduced-sodium chicken broth

  • 1/4 cup grated parmesan

  • 1/3 cup heavy cream or half-and-half

  • Clear

Directions

  1. Bring a large pot to medium/high heat. Add the half stick of butter and bring to a sizzle.
  2. Next, add the onions and balsamic vinegar. Sauté for about 10 minutes, stirring occasionally until the onions start to brown.
  3. Lower heat to medium/low and cook for another 25 minutes or until the onions are browned and tender. Remove from pot.
  4. Combine all ingredients listed under ‘for the chicken’ in a large bowl. Mix well. Bring the pot used to cook the onions to medium/high heat.
  5. Add in the chicken. Cook undisturbed for about 6-7 minutes, then stir the chicken and cook for another 6 minutes or so. Add in the tomatoes and pepper and sauté briefly.
  6. Next, add the chicken broth, roasted garlic, and uncooked Farfalle pasta. Stir, bring to a rolling boil, lower heat to low, and cover.
  7. Cook for about 15-18 minutes (stirring once halfway through) or until all liquid is absorbed and pasta is cooked to a texture of your liking.
  8. Once your noodles are cooked, add in the heavy cream and parmesan cheese. Stir until the cheese melts, toss in your caramelized onions, serve warm, and enjoy!
