This addictively delicious recipe by @flychefaldenb is perfect for everything from family dinner to meal prep. With veggies and andouille sausage, it truly makes for a filling and kickin’ good Cajun meal that you can enjoy time and time again!

Cajun Fried Rice

  • 4 cups cooked day old rice

  • 2 tbs butter

  • 1⁄2 cup shallot (diced)

  • 1⁄2 cup green bell pepper (diced)

  • 1⁄3 cup celery (diced)

  • 2 tbs garlic (minced)

  • 1 tsp ginger (grated)

  • 1⁄2 lb andouille sausage (1⁄4 inch slices)

  • 1⁄2 lb crawfish tails

  • 1⁄3 cup carrots (diced)

  • 1⁄3 cup peas

  • 2 eggs

  • 1 tsp sesame oil

  • 2 tbs soy sauce

  • 2 tsp oyster sauce

  • 2 tbs mirin

  • Tony Chachere’s More Spice Seasoning to taste

  • Chives for garnish

  • Clear


  1. In a wok or large skillet over medium-high heat, melt the butter and sear the sausage for 3 minutes. Remove the sausage with a slotted spoon.
  2. Pour in sesame oil and add in the shallots, bell peppers, and celery. Saute for 3 minutes or until tender. Add in garlic, ginger, peas and carrots and cook for 2 minutes.
  3. Push everything to one side of the pan and pour in eggs. Scramble then mix into the vegetables.
  4. Add the sausage back along with crawfish and rice. Pour in all the sauces and stir fry until everything is well combined.
  5. Season with Tony Chachere’s More Spice to taste, garnish with chives and enjoy!
