  • 3 Pounds Dark Meat Chicken

  • 1 Can Coconut Milk

  • Curry Powder, to Taste

  • Tony’s Original Creole Seasoning, to Taste

  • Italian Seasoning, to Taste

  • Fresh Thyme Sprigs

  • Fresh Lime Juice from 1 Lime

  • Parsley for Garnish

  • Clear


  1. Preheat oven to 400°F.
  2. Add chicken to a large bowl and season with Tony’s Original Creole Seasoning, curry powder and Italian seasoning to taste.
  3. Stir in coconut milk, thyme sprigs and fresh lime juice.
  4. Pour everything into a plastic locking bag and let marinate for at least an hour.
  5. Coat baking dish with cooking oil spray.
  6. Pour the entire contents of the chicken into the baking dish and arrange the chicken evenly.
  7. Cover dish with foil and bake for 30 minutes.
  8. Uncover and broil for another 5-10 minutes, or until the chicken is golden brown and crispy.
  9. Once the chicken is fully cooked, add it to a serving dish and spoon curry sauce over the chicken and top with chopped parsley.
