3 Pounds Dark Meat Chicken

1 Can Coconut Milk
-
Curry Powder, to Taste
-
Tony’s Original Creole Seasoning, to Taste
-
Italian Seasoning, to Taste
-
Fresh Thyme Sprigs
-
Fresh Lime Juice from 1 Lime

Parsley for Garnish

Directions
- Preheat oven to 400°F.
- Add chicken to a large bowl and season with Tony’s Original Creole Seasoning, curry powder and Italian seasoning to taste.
- Stir in coconut milk, thyme sprigs and fresh lime juice.
- Pour everything into a plastic locking bag and let marinate for at least an hour.
- Coat baking dish with cooking oil spray.
- Pour the entire contents of the chicken into the baking dish and arrange the chicken evenly.
- Cover dish with foil and bake for 30 minutes.
- Uncover and broil for another 5-10 minutes, or until the chicken is golden brown and crispy.
- Once the chicken is fully cooked, add it to a serving dish and spoon curry sauce over the chicken and top with chopped parsley.
