Ingredients

4 Tablespoons Butter, Divided

1 Small Yellow Onion, Chopped

3/4 Cup Celery, Chopped

3/4 Cup Carrots, Chopped

2 Cloves Garlic, Minced
-
1/4 Cup All-Purpose Flour
-
1 Tablespoon Tony’s Original Creole Seasoning
-
1 Tablespoon Fresh Thyme Leaves
-
1 Jar (4 Ounces) Diced Pimentos
-
4 Cups Low-Sodium Chicken Broth
-
1 1/2 Cups Milk
-
2 Cups Cooked White Rice
-
2 Cups Shredded Rotisserie Chicken

Directions
- In a large Dutch oven, melt the butter over medium heat.
- Add in the onions, celery, carrots and garlic to the pot and cook for 8-10 minutes until softened, stirring often.
- Add the flour, Tony’s Original Creole Seasoning and thyme leaves and continue to cook for 2 minutes, stirring often.
- Add the pimentos, broth and milk and reduce the heat to a simmer.
- Cook uncovered, stirring occasionally for 8-10 minutes until the mixture thickens.
- Add the rice and shredded rotisserie chicken and cook until heated through, about 2-3 minutes. (You can sprinkle more Tony’s Original Creole Seasoning on the chicken for even more flavor!)
- Serve and enjoy!
