Cajun Cheddar Biscuit Chicken Sandwiches

With layers of delicious Cajun flavor throughout the succulent, marinated chicken to the flaky, buttery biscuits, these Cajun Cheddar Biscuit Chicken Sandwiches by @mandajesspanda are the perfect crispy and spicy bite for any occasion.

Ingredients

  • For the Chicken Marinade:

  • 4 Chicken Thighs, Fat Trimmed

  • Tony’s More Spice Seasoning, to Taste (About 3 Teaspoons Used)

  • 2 Tablespoons Tony’s Chicken Marinade

  • 1/4 Teaspoon Smoked Paprika

  • 2 Teaspoons Garlic Powder

  • 1 Teaspoon Oregano

  • 2 Teaspoons Parsley Flakes

  • For the Chicken Breading:

  • 1 Cup All-Purpose Flour

  • Tony’s More Spice Seasoning, to Taste (About 2 Teaspoons Used)

  • 3 Teaspoons Garlic Powder

  • 1 Teaspoon Oregano

  • 1 Teaspoon Smoked Paprika

  • 3 Teaspoons Parsley Flakes

  • 4 Cups Canola Oil for Frying

  • For the Biscuits:

  • 1 Box Cheddar Biscuit Mix of your Choice

  • Tony’s No Salt Seasoning, to Taste (1 Teaspoon Used for Batter and 1 Teaspoon Used for Butter Topping)

  • For the Cajun Hot Honey:

  • 1/3 Cup Honey

  • 3/4 Teaspoon Red Pepper Flakes

  • Tony’s No Salt Seasoning, to Taste (1 Teaspoon Used)

  • Clear

Directions

For the Chicken:

  1. Combine all ingredients for the chicken marinade. Mix well and let marinate for at least 30 minutes.
  2. Once the chicken has marinated, combine all the chicken breading ingredients in a large bowl. Dip each piece of chicken into the breading being sure to coat all sides. Lay chicken pieces out on a plate for 10-20 minutes, then dip them again in the breading mixture.
  3. To fry the chicken, fill half a skillet or large pan with oil (about 4 cups used in this recipe). Bring the oil temperature to medium heat. Add all the chicken and cook for about 10 minutes or until the chicken starts to brown. Flip the chicken over and cook for another 10 minutes or until fully cooked and browned to your liking.

For the Biscuits:

  1. While the chicken is frying, follow the box instructions to make the cheddar biscuits. For more Cajun flavor, add 1 teaspoon Tony’s No Salt Seasoning to the mix and 1 teaspoon to the butter topping spread.

For the Cajun Hot Honey:

  1. In a microwave-safe bowl, combine all ingredients for the Cajun Hot Honey. Mix well then microwave for about 30 seconds. Stir well again and let sit for at least 20 minutes to thicken back up before serving.

Assemble Your Sandwich:

  1. Cut biscuits in half and then add the chicken, hot honey and your favorite sandwich toppings. Enjoy warm!
