Cajun Buffalo Wings

These Cajun Buffalo Wings by @tfti.bbq are more than a cookout icon, they are absolute gold! Impressively juicy, flavorful, and absolutely crave-worthy…you can’t ask for more!


  • 2lbs of party wings

  • Tony Chachere’s Creole Chicken 30min Marinade

  • Tony Chachere’s More Spice seasoning

  • Cajun Buffalo Mop Sauce:

  • 2 tbsp butter

  • 1/2 cup buffalo sauce

  • 1 tbsp garlic paste

  • 2-3 tbsp Tony Chachere’s No Salt seasoning

  • 1/4 cup beer

  • Spicy Blue Cheese:

  • 1 cup Blue Cheese Crumbles

  • 1/4 cup Sour Cream

  • 1/4 cup Mayonnaise

  • 1/2 cup Buttermilk

  • 1 tsp Lemon Juice

  • 1 tsp Kosher Salt

  • 1 tsp Black Pepper

  • 1 tsp Garlic Powder

  • 1 tsp Cayenne Pepper or your favorite hot sauce

  • 1 tsp Smoked Paprika

  • pinch of parsley

  • Clear


  1. Marinate wings in Tony Chachere’s Creole chicken marinade for 30min. Then pat dry and season with Cajun seasoning
  2. Grill your wings over coals and hickory wood
  3. In a cast iron pot add in mop sauce ingredients and simmer for 10min before mopping down wings on both sides
  4. Continue mopping for extra flavor
  5. When wings reach an internal temp of 190F remove and top with parsley
  6. Mix spicy blue cheese ingredients by hand for chunky or blend for a creamy texture. Add more buttermilk if it’s too thick.
  7. Serve wings with spicy blue cheese and enjoy!
