Directions

Making the Fried Chicken:

  1. Season the chicken breasts with Tony’s Original Creole Seasoning, cayenne pepper, onion powder and garlic powder.
  2. Mix together the buttermilk ingredients (buttermilk, egg and Tony’s Pepper Sauce). Pour mixture over the seasoned chicken and let it marinate for 30 minutes.
  3. While chicken is marinating, mix together the all-purpose flour, cornstarch and cayenne pepper in a separate bowl.
  4. After the chicken is finished marinating, start heating the oil on medium heat.
  5. Add the chicken to the seasoned flour mixture, coating each very well.
  6. When the oil is hot enough, carefully add the chicken. Do not overcrowd. (This recipe used about 8-9 cups of oil for deep frying.)
  7. Fry the chicken for 9-11 minutes for medium thickness or 11-14 minutes for thicker pieces of chicken breast.
  8. Once chicken is finished frying, place on a paper towel-lined plate and set aside.

Making the Jalapeño Mayo:

  1. In a blender, blend mayonnaise, jalapeños, red pepper flakes and sugar.

Assembling the Buttermilk Fried Chicken Sandwiches:

  1. Spread butter on the buns and toast.
  2. After toasting the buns, spread jalapeño mayo on top and bottom buns.
  3. Assemble the sandwich with chicken, lettuce, tomatoes, sliced pickles. Enjoy!
