Holiday Yam Casserole

This recipe is easy and delicious to make. It can be prepared a day or two ahead and will be ready to serve during your holiday feasts. It is made with cooked sweet potatoes, cinnamon, pecans, coconut, and corn flakes. Even people who who dislike sweet potatoes will be begging for seconds!
Prep time: 5 minutes   Cooking time: 15 minutes   Serves: 8   


1 can Sweet Potatoes (Cooked)
2 Whole Eggs
1 teaspoon Vanilla extract
4 tablespoon Margarine
1 can Evaporated Milk
1 1/4 cup Sugar
1/2 teaspoon Cinnamon


1: In a bowl, mash potatoes and mix with all other ingredients.
2: Place in greased casserole and bake at 400 degrees for 15 minutes.
3: Remove from oven and prepare topping.
