Cajun Crawfish Corn Bread

Delicious side dish to any southern-style meal such as Gumbo or Crawfish Etouffée. Just add butter, and this Cajun cornbread will melt right in your mouth!
Prep time: 10 minutes   Cooking time: 55 minutes   Serves: 12  


2 Cups Corn Meal
1 Tbsp. Salt
1 Tsp. Baking Soda
6 Whole Eggs
2 Whole Chopped Onions
1/2 Cup Jalapeño Peppers
16 1/3 Cup Sharp Cheddar
1/3 Cup Oil
2 Lbs. Crawfish tails
2 Cans Creamed Corn


1: In a large mixing bowl, combine corn meal, salt and baking soda.
2: In a medium bowl, beat eggs thoroughly.
3: Add onions, peppers, cheese, oil, creamed corn and crawfish to beaten eggs.
4: Pour into corn meal mixture and mix well.
5: Pour into 12 x 14 inch baking dish coated with cooking spray.
6: Bake at 375 degrees for 55 minutes or until golden brown.
