Cajun Country Breakfast

A great Cajun Country Breakfast made with Tony Chachere's Creole Dirty Rice Mix. For a better breakfast burrito, stuff finished dish into warm tortillas and top with grated cheese & salsa!
Prep time: 5 minutes   Cooking time: 25 minutes   Serves: 6  

INGREDIENTS:

1/4 Lb. Breakfast Sausage or lean Ground Beef
4 Eggs or Egg Substitute
1/2 Cup Chopped Fresh Mushrooms
1 Box Tony Chachere's Creole Dirty Rice Mix
2 1/4 Cups Water
Lodge Cast Iron Skillet

DIRECTIONS:

1: In a Lodge Cast Iron Skillet, brown sausage or beef.
2: Drain fat.
3: Add eggs and cook until firm.*
4: Add remaining ingredients. Stir well.
5: Bring to a boil. Reduce heat.
6: Cover and simmer for 25 minutes, stirring occasionally.

*Optional: After Step 6, place eggs onto skillet and broil on High in oven for 4-6 minutes or until eggs are cooked to your preference.
