Tony’s Adobo Pork Spare Ribs

Ingredients

  • 2 lbs pork spare ribs

  • 2 tablespoons coconut or canola oil, divided

  • 1 onion, chopped

  • 6 cloves garlic, minced

  • 1 piece of ginger (about thumb size), peeled and minced

  • Tony Chachere’s Original Creole Seasoning, to taste

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • 1 tablespoon Italian seasoning

  • 1 tablespoon paprika

  • 1 cup vinegar

  • 1/2 cup soy sauce

  • 1 cup water

  • 2 bay leaves

  • 1 tablespoon brown sugar

  • green onions, for garnish

Directions

  1. Cut spare ribs into 2-inch pieces. Add to a colander and rinse with cold water.
  2. Add ribs to a bowl and pat dry. Add 1 tablespoon of the oil to the bowl and mix until fully coated.
  3. Season ribs with all seasonings. Use your hands to mix until they’re fully coated.
  4. In a heavy-bottomed pot or skillet over medium heat, heat the remaining oil. Add onions, garlic, and ginger and cook, stirring regularly, until softened.
  5. Add pork ribs and cook for about 3 to 5 minutes or until lightly browned.
  6. Add vinegar and bring to a boil, uncovered and without stirring, for about 3 to 5 minutes.
  7. Add soy sauce, water, brown sugar, and bay leaves, and bring to a boil
  8. Lower the heat, cover, and simmer for about 40 to 50 minutes or until meat is fork-tender and the sauce is reduced as desired.
  9. Garnish with green onions, and serve hot over white rice.
