1 spiral sliced ham (8-10 lbs)

1/2 cup Tony Chachere’s Honey Bacon & BBQ Injectable Marinade

1 tbsp Tony Chachere’s Original Creole Seasoning

1/2 cup honey
-
1/4 cup brown sugar
-
3 tbsp unsalted butter
-
2 tbsp Dijon mustard
-
2 tbsp apple cider vinegar

1/2 tsp garlic powder
-
1/2 tsp black pepper

1/2 tsp red pepper flakes (optional)

1/2 lb bacon, cooked until crispy and chopped

Directions
- Preheat your pellet grill or smoker to 250–275°F. This temperature allows the ham to slowly warm while absorbing smoky flavor.
- Place the spiral ham in a cast iron skillet or foil pan. Lightly coat the outside with Tony Chachere’s Original Creole Seasoning, ensuring the seasoning gets down into the slices for extra flavor.
- Place the ham in the smoker and cook until it reaches 120–125°F internal temperature, about 60–90 minutes depending on the size of the ham.
- In a small saucepan over medium heat combine: butter, honey, brown sugar, Tony Chachere’s Honey Bacon & BBQ Injectable Marinade, Dijon mustard, and apple cider vinegar
- Stir until melted and smooth (about 3–4 minutes). Add garlic powder, black pepper, and red pepper flakes.
- Brush or spoon the glaze generously over the ham, allowing it to drip down into the spiral slices.
- Sprinkle crispy chopped bacon over the top of the ham so it sticks to the glaze.
- Return the ham to the smoker and increase the heat to 275°F. Cook for another 20–30 minutes, glazing once or twice more, until the ham reaches 135–140°F internal temperature and the glaze becomes sticky and caramelized.
- Remove the ham from the smoker and let it rest 10 minutes before serving. Spoon extra glaze from the pan over the slices and finish with any remaining crispy bacon.
