1 Pound Smoked Sausage, Cut Into 1/4-Inch Rounds

1 1/2 Pounds Baby Red Potatoes, Quartered

1 Green Bell Pepper, Sliced

1 Red Bell Pepper, Sliced

1 Red Onion, Sliced

1 Teaspoon Tony’s Spice N’ Herbs Seasoning, More to Taste

Directions
- In a saucepan over medium-high heat, add in sausage and brown for 3-5 minutes. Remove with a slotted spoon and set aside.
- Add your potatoes into the pan with a rendered fat from the sausage. Season with Tony’s Spice N’ Herbs Seasoning and cook for 5 minutes stirring halfway through.
- Add in the peppers and onions and place a lid over the pan. Let cook for 5 minutes. Remove the lid and stir.
- Cover for another 5 minutes or until the potatoes are tender.
- Add more Tony’s Spice N’ Herbs to your taste and enjoy!
