Kitchen Tip : Creole Shrimp Quesadilla

Ingredients

  • 1 Tablespoon Tony’s Original Creole Seasoning, or to Taste

  • 1/2 Pound Shrimp, Peeled and Deveined (or any  other meat you have on hand)

  • 1 Cup Shredded Cheese, Your Choice

  • 1/2 Yellow Onion, Diced

  • 1/2 Red Bell Pepper, Diced

  • 1/2 Green Bell Pepper, Diced

  • 2 Burrito-Sized Tortillas

  • 1 Tablespoon Butter

  • Olive Oil

  • Clear

Directions

  1. Heat olive oil in a large pan over medium heat. Add onions and sauté until soft and translucent, about 3-4 minutes. Add peppers and cook until soft, about 8 minutes. Set aside.
  2. In a large bowl, season shrimp with Tony’s Original Creole Seasoning and toss to combine. In the same pan as the onions and peppers, cook shrimp until pink. About 1-2 minutes on each side.
  3. Melt 1/2 tablespoon butter over medium heat and place half of the tortilla in the pan. Layer one side with 1/4 cup cheese, shrimp, peppers and onions, and another 1/4 cup of cheese. Cook until the cheese is melted and the tortilla is golden and crispy, about 2 minutes on each side. Repeat for the remaining tortilla.
  4. Cut and eat immediately, enjoy!
