A delicious red snapper dish with a Cajun twist. Fun to make and is terrific served over a bed of rice.

Ingredients

  • 3 Pounds Red Snapper

  • 2 Tablespoons Tony’s Original Creole Seasoning

  • 2 Tablespoons Margarine

  • 1 Can Tomato Sauce

  • 1 Teaspoon Sugar

  • 1 Cup Onions, Chopped

  • 1/2 Cup Bell Pepper

  • 4 Bushels Garlic

  • 1 Cup Celery, Chopped

  • 1/4 Cup Dry White Wine

  • Clear

Directions

  1. Season fish, inside and out, and place in an open baking pan.
  2. In a saucepan, combine margarine, tomato sauce, sugar and vegetables cook over low heat for 30 minutes.
  3. Pour wine over red snapper, followed by the sauce.
  4. Place in 300°F oven and cook for 1 hour, basting occasionally.
  5. Serve with oyster dressing.
