Ingredients

1/2 Cup Shortening

2 Cups Molasses

2 Whole Eggs

2 Cups All-Purpose Flour

1 Teaspoon Cinnamon

1 Teaspoon Allspice

2 Teaspoons Ginger
-
1 Cup Raisins
-
1 Teaspoon Baking Soda
-
1 Cup Boiling Water
-
1/4 Teaspoon Salt
- Clear
Directions
- In a bowl, dredge raisins with a little flour and set aside.
- In another bowl, cream shortening and molasses.
- Beat in eggs, one at a time.
- In a third bowl, combine flour, cinnamon, allspice, ginger and salt.
- Add raisins to flour mixture.
- Pour molasses mixture into flour mixture.
- In a large measuring cup, dissolve baking soda in boiling water and add to mixture.
- Stir until smooth.
- Pour into greased and floured oblong baking pan and bake at 350°F until cake comes away from sides of the pan (about 30 minutes).
